What is "the conca" and what was its use?
The conca is a circular, shallow and wide container, made of wood (larch or fir) or copper that was used for skimming milk using the gravity skimming technique. The raw milk was poured into it and left to rest in a cool dark place for the time necessary for the fat component of the milk (cream) to rise to the surface.
