What is the ripener and what is it used for?
The ripener is a cylindrical steel container of variable dimensions, with a drain tap at the bottom. In this container the honey is left to settle for a few days, so that it is purified from any residual wax particles and air bubbles. The latter rise to the surface forming a whitish foam that is removed and diluted again as food for the bees.
