What were the uses of the entrails of slaughtered animals?
The intestines of the pig (but also of the bovine) were carefully washed and emptied of their contents and went to constitute the casing necessary for the stuffing of the salamis.
Organs such as the liver, heart, lungs, stomach, etc. were intended for food consumption.
