The cleaver is a heavy bone-breaking knife, with a broad, sturdy blade balanced so that its weight rests on the tip. Held on the long handle, with two hands, it was used for difficult cuts that required a lot of strength, such as cutting (along the spine) the carcass into two identical halves (mezzene).
