What is the Roche scale?
The Roche scale is a visual comparison color scale, consisting of 15 cards with increasing intensity from pale yellow to very intense orange, which is used to evaluate the pigmentation of the yolk.
The Italian consumer tends to prefer a rather intense yolk color between 12 and 14 on the Roche scale. In the United States and Northern Europe, less intense colors are preferred (7-9 on the Roche scale).
