Why is it recommended to store eggs in the refrigerator when buying them in the store?
Even if we do not find eggs in the refrigerated section of the store, the packaging recommends storing them in the refrigerator once purchased. The reason for this different management of eggs is not clear to many people. The small but constant temperature changes that eggs would undergo if they were stored in the store in refrigerators (whether they are open refrigerators or in refrigerated cabinets with doors) would generate condensation on the shell that would "melt" and remove the protective coating (cuticle), invisible to the naked eye, which covers the porous shell to protect it from external contamination. It is for this reason, therefore, that eggs are sold at room temperature. Eggs do not necessarily have to be stored in the refrigerator, especially if they are consumed within a few days, but storage in the refrigerator slows down the degenerative processes of the food, allowing them to be preserved for longer.
