How can we explain the growth of poultry farming between the First World War and the post-World War II period?
The growth of poultry farming in the first half of the twentieth century can be largely traced back to the paradigm shift in agricultural policy pursued by the Confederation. After having focused the decades from 1870 on the rationalization of production systems, with the arrival of the war and the related supply difficulties the State adopted new strategies aimed primarily at ensuring the country's food self-sufficiency through a restructuring of agricultural production. For this purpose, the breeding of poultry was also encouraged, which, with little effort, guaranteed a good yield and was affordable for everyone, housewives, farmers as well as workers and employees.
