What is a boiler and what is it used for?
The boiler is a large container made of copper that is hung on a support structure (called a stork) during the cheese production process. Milk is poured into it and heated to 30°C-32°C to start the cheese production process. The boiler is the environment in which the milk remains, first as a liquid and then as curd, until the moment of extraction and subsequent shaping of the cheese.
