What is a vat and what is it used for?
The vat is a large container made of copper that is hung on a support structure (called a stork) during the cheese production process. Milk is poured into it and heated to 30°C-32°C to start the cheese production process. The vat is the environment in which the milk remains, first as a liquid and then as curd, until the moment of extraction and subsequent shaping of the cheese.
