How were hard cheeses shaped?
The fascera is a thin and elastic circular band, generally made of beech wood, which is used to contain and shape the fresh cheese. Once the cheese has been placed inside, the fascera is placed on an inclined board (spersola) and pressed with weights (wooden boards or stones) in order to facilitate the draining of the remaining whey and give the cheese its typical compactness.
